To celebrate Father’s Day this year, I asked Shey (my husband) what he wanted me to make as his Father’s Day dinner meal. He answered RIBS right away, no questions asked! I have been dying to try making ribs in my instant pot. So, I challenged myself to make these without taking the whole day in the kitchen. If I tell you that these took all of 45 mins with prep from start to finish, would you believe me? YES, only 45 minutes of your time for succulent, flavorful and utterly finger licking good instant pot ribs.
How to Remove the Membrane from Ribs :
- Locate the membrane on either end of the rack (at the back of the ribs).
- Pull the membrane and tear it off with your fingers or use a paper towel (for better grip).
If you don’t own an Instant Pot yet, this should give you a good reason to get one. It a pressure cooker, rice cooker, slow cooker and it sautés all in one. It makes cooking much faster and efficient. It’s easy to use and easy to clean. You need to get one ASAP. Love mine and use it all of the time. I make hard boiled eggs, baby potatoes, rice, quinoa, pork carnitas (all of these recipes will be coming soon to the blog, I promise).

I picked up this delicious red wine from Exitus, to go with the ribs since we prefer red wine with our meat. Their wine is aged for 3 months in bourbon barrels. This provides a deep ruby color with aromas of blackberry compote, leather and dusty dark chocolate. Perfection in a bottle. Plus look at how sexy this bottle is. rarely do you see a red wine in a clear bottle. Their label is pretty epic too, don’t you think? You totally need to give it a try.
When shopping at Fred Meyer for the ingredients for this recipe, I decided to try their Private Selection Kansas City Inspired BBQ sauce, so happy that I did, it’s so delicious. I’ve had a great experience before with their BBQ sauces and figured I’d give this flavor a try. So glad I did, the thick, sweet sauce with hints of molasses and brown sugar, made these instant pot finger licking good ribs that much better. The flavors worked well with the dry rub I made to go on the ribs.

Back to the ribs. When buying the ribs, look for ribs with even and uniform thickness in the rack. Try to find ribs with even marbling. I start off with Simple Truth Natural Pork Back Ribs, these were on sale and couldn’t resist getting a few extra packages to throw in the freezer and keep them for those cravings of ribs on a weekday. Because RIBS, am I right? You can’t just eat a few. Always make extra. The recipe says serves 3 people, but if you’re extra hungry then two people can split a rack easily.
We were ready to get messy when we eat, so do it right. I served the ribs with my simple coleslaw cabbage salad because of the richness of the ribs, I wanted something simple, fresh and crunchy to along with them. It was pure bliss. We used our hands to eat the ribs and stayed a bit more proper with a fork for the salad, but I won’t judge you if you just want to skip the fork and go for it with your hands all the way! More power to you.

FINGER LICKING GOOD INSTANT POT RIBS
DRY RUB FOR RIBS
- 1 1/2 tbsp brown sugar
- 1 tbsp paprika
- 1/2 tsp chilli powder
- 1/2 tbsp garlic powder
- 1/2 tbsp sea salt
RIBS & SAUCE
- 1 rack baby back ribs (beef or pork)
- 1/4 cup Private Selection Kansas City Inspired BBQ sauce
- 1 cup cold water
- 1/2 cup apple cider vinegar
- 1 tbsp liquid smoke
- Combine all of the dry ingredients for the rub, mix well. Wash and dry your ribs completely. Apply dry rub generously all over the top, bottom and sides of ribs.
- Add in your wire rack, pour in the apple cider vinegar, liquid smoke and water under the rack. Add rack to keep the ribs out of the liquid on the bottom of the Instant Pot. If you don’t have a rack, ball up some aluminum foil and try to make a rack of some sort to elevate the pork.
- Close lid on your Instant Pot and cook at High Pressure for 16 – 25 minutes. Adjust the timing according to your preference: 16 minutes (Tender with a bit of chew) to 25 minutes (Fall off the bone). Let the Instant Pot sit and naturally release the pressure for 10 minutes. Open the lid carefully after 10 minutes.
- Preheat Oven: While the ribs are still cooking in the Instant Pot, preheat the oven to 475F.
- Place ribs onto a cookie sheet covered with foil, brush on the BBQ sauce all over the ribs generously on all sides including the bones and finish in the oven uncovered. Place the ribs with the baking tray in the oven for 5-10 minutes.
- Remove the ribs from the oven and serve! Brush on more sauce if desired.
