1miniwatermelon(approximately 4 cups), rind removed and cubed
2Persian cucumbers(approximately 1 cup), sliced
Honey Lime Dressing
¼cupextra virgin olive oil
1limejuiced and zested
kosher saltto taste, I added about 1 ½ teaspoon
Remove the rind from the watermelon and cut it into cubes. Chop the mint and crumble the feta cheese.
Make the dressing by adding olive oil, lime zest, juice, salt, and honey in a bowl. Whisk to combine.
In a large serving bowl, add the watermelon, cucumbers, arugula, feta, and mint. Drizzle the dressing over top and gentry stir to combine. Taste and adjust the seasongs as needed. Add a few additional sprigs of mint for presentation (optional) and enjoy cold.
Make ahead: Prepare the melon, cucumber, and dressing. Store everything in separate airtight containers in the fridge until it’s time to assemble. Storing: Keep the leftovers in airtight containers in the fridge. It will get a little watery, so make sure to drain the excess liquid before eating. The leftovers should stay fresh for 1 or 2 days.
