15-Minute Garlic Shrimp Soba Noodles are light, fresh, and even better than takeout. Gluten free soba noodles are tossed in a savory sesame sauce before being topped with tender garlic shrimp. It’s an easy and versatile meal that’s perfect for healthy lunches or quick dinners!

10ozbuckwheat soba noodles(GF certified if gluten-intolerant)
1lbshrimpextra large, peeled and deveined
Dry the shrimp with a paper towel before seasoning with salt on both sides.
Heat a large skillet over medium-high heat. Add olive oil, then shrimp. Cook for about 2-3 minutes. Flip, turn down the heat to medium-low, add garlic and ginger, cook for another 2-3 minutes. Transfer to a plate.
Bring a pot of water to a boil and cook your soba noodles as per packet instructions. They overcook easily so I tend to err on the side of caution and cook them for a little less, say 4 minutes (even if the packet says 5).
Rinse the noodles in cold water to stop the cooking process.
Whisk all of the sauce ingredients together until fully combined. Add most of the ¼ cup of green onions. Reserve a bit for topping.
Toss the noodles with sauce, add to bowls, top with shrimp, the remainder of green onions, and sesame seeds.
