Cut apricots into halves and quarters, I mixed the size for various textures.
In a deeper baking dish, I used a cast iron pan for mine. Add 1/2 cup of sugar or honey, toss the cut apricots and let sit while oven heats up. Bake for 10-15 minutes.
Bring Apricot Honey Fromage Blanc to room temperature, at least 30 minutes prior to serving. Spread in a plate. Top with Roasted Apricots. Serve on top of sliced baguette or crackers. Enjoy!
Notes
NOTE :If apricots are smaller, it will take 10 minutes. If they are larger and less ripe, they will bake for 12-15 minutes.
