Spoil mom for Mother’s Day with this delectable Strawberry Cream Cheese Stuffed French Toast. It’s a super simple recipe and stuffed with all the flavors of spring. Enjoy it with maple syrup, coffee, or a fresh mimosa!
In a small bowl, mix the cream cheese and jam together until you have a spreadable consistency.
Cut the challa bread into 1 inch thick slices. Using a sharp knife, cut an opening on the edge of the bread slice. Don’t go all the way through - we’re only making a pocket in each slice.
Use a butter knife to spread a few teaspoons of cream cheese filling into each pocket. Make sure not to overstuff as the filling will seep out as it cooks. Seal the cut edges by pressing them down with a fork.
In a small bowl, whisk the eggs, milk, and vanilla together. Dip each stuffed bread slice in the mixture, coating both sides to coat completely.
Heat a griddle or skillet over medium heat, and add the butter. When the butter has melted, cook the stuffed french toast slices for 4 to 5 minutes a side or until golden brown.
Top with strawberries, maple syrup, and powdered sugar.
