Ingredients
4
yukon gold potatoes
cut into wedges or use russet potatoes

tablespoons
olive oil

cloves
garlic
finely chopped

teaspoon
garlic powder

teaspoon
kosher salt
1/2

smoked paprika
1/2
cup
parmesan cheese
grated

tablespoons
chives
finely chopped
Basil aioli
for serving
Instructions
Cut the potatoes in half and then into smaller wedges. Soak in water for at least 10 mins. Drain and Pat completely dry.
Add potatoes to a bowl, drizzle olive oil and toss to coat.
Sprinkle spices and salt, toss to coat.
Preheat the
air fryer
to 400 degrees F for 3 minutes.
Cook for 20-25 minutes, tossing halfway.
Add parmesan cheese and cook for an additional 5-7 minutes.
Add to a bowl and toss with fresh garlic and chives. Serve with Lemon Basil Aioli.
Notes
Cut the wedges evenly so they cook at the same rate and crisp up on all sides.
Soak the potatoes in cold water to remove excess starch and help them turn extra crispy.
Dry the wedges completely before seasoning to prevent steaming in the air fryer.
Preheat the air fryer for a few minutes to ensure even cooking from the start.
Don’t overcrowd the basket; cook in batches if needed for the best crisp texture.
Toss the wedges halfway through cooking so they brown evenly.
Add the parmesan near the end so it melts and sticks without burning.
Use freshly grated parmesan for better flavor and texture than pre-shredded cheese.
Toss with fresh garlic and chives right before serving for a bright, savory finish.
Serve immediately with basil aioli or your favorite dip while the wedges are hot and crisp.
