Dry the thawed shrimp with a paper towel and season with kosher salt. Heat the olive oil in a skillet over medium-high heat and add the shrimp.
Cook the shrimp for 1-2 minutes per side or until pink. Remove to a plate.
In the same pan, lower the heat and add in the garlic and ginger. Cook for 1 minute.
Noodles
Boil a pot of water and cook the soba noodles according to the package instructions. Soba noodles overcook very easily, so watch them carefully! After about 4 to 5 minutes, drain and rinse the noodles in cold water to stop them from cooking. Add to a serving bowl or divide into individual bowls.
Sesame Sauce
Make the sweet sesame sauce by whisking all of the ingredients together in a bowl.
Toss the cold noodles in the sesame sauce, add to bowls, top with shrimp, green onions, and sesame seeds, then enjoy!
