This Brie and Fig Crostini is a simple, yet elegant appetizer you can whip together in 5 minutes. Featuring cheese, fig jam, fresh figs, and bread in every bite, it’s a handheld snack no party guest will be able to pass up.
Preheat the oven (or a gas grill*) to 450 degrees Fahrenheit.
Line either a full sized or ½ sized rimmed baking sheet with parchment paper. If your baking sheet is half size like mine, you will need to bake the crostini in two batches.
Slice the baguette on the diagonal into pieces no wider than ½-inch. Lightly brush one side of each slice with olive oil (this will require about 2 to 3 tablespoons oil).
Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 4-5 minutes, until they’re crisp and nicely golden on top. Remove the crostini to a cooling rack to cool down while you prep the toppings.
Add a small spoonful of fig jam on each toast, top with a slice of brie.
Top with a slice of fresh fig slice, drizzle with honey, sprinkle with a few thyme leaves and enjoy. (Tip: if figs aren't in season, use a pear or apple instead.)
