- Brie – Soft, rich, and slightly earthy, brie melts just enough over the warm toast. Camembert or triple-cream cheese can be used as substitutes.
- Fresh Figs – Sliced figs add a juicy, fresh contrast to the creamy cheese and jam. When figs aren’t in season, use thin slices of pear or apple instead.
- Honey – A light drizzle ties everything together with a touch of sweetness and shine. Maple syrup can be used if you prefer a different flavor.
- Fresh Thyme – The small leaves add a hint of herbal freshness that balances the richness of the cheese and honey.

Instructions


- Slice the bread: Cut the baguette on a diagonal into slices about ½ inch thick.
- Brush with oil: Lightly brush one side of each slice with olive oil, using about 2 to 3 tablespoons total.


- Cut the brie: Slice the brie into thin wedges so each crostini gets a creamy layer of cheese.
- Slice the figs: Halve or quarter the fresh figs, depending on their size, for easy topping.


- Toast the bread: Arrange the baguette slices on a parchment-lined baking sheet and bake at 450°F for 4-5 minutes, until golden and crisp. Let cool slightly.
- Spread the jam: Add a small spoonful of fig jam to each toasted slice, spreading it evenly to cover.


- Add the brie: Place a slice of brie on top of the fig jam so it begins to soften slightly from the warm toast.
- Top with figs: Arrange with one fig slice over the brie for a sweet and fresh finish.


- Drizzle with honey: Finish with a light drizzle of honey.
- Garnish and serve: If desired, garnish with a few thyme leaves and serve.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Fruit Options: I like using fresh figs when they’re in season, but thinly sliced pear or apple work great too. You can also skip the fresh fruit and use just fig jam for an easier version.
- Cheese Swaps: Brie is my go-to, but Camembert or goat cheese also taste amazing here. You can even try blue cheese if you like a stronger flavor.
- Herb Choices: Fresh thyme adds a nice touch, but rosemary or mint can change up the flavor in a fun way. I sometimes skip herbs altogether when I want it extra simple.

Brie and Fig Crostini
Ingredients
- 1 baguette, use crusty French bread, sliced
- 2-3 tablespoons extra-virgin olive oil, more if needed
- 6 ounces fig jam
- 10 ounces brie, sliced into wedges
- 6 fresh figs, sliced
- 2 tablespoons honey
Instructions
- Preheat the oven (or a gas grill*) to 450 degrees Fahrenheit.
- Line either a full sized or ½ sized rimmed baking sheet with parchment paper. If your baking sheet is half size like mine, you will need to bake the crostini in two batches.
- Slice the baguette on the diagonal into pieces no wider than ½-inch. Lightly brush one side of each slice with olive oil (this will require about 2 to 3 tablespoons oil).
- Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 4-5 minutes, until they’re crisp and nicely golden on top. Remove the crostini to a cooling rack to cool down while you prep the toppings.
- Add a small spoonful of fig jam on each toast, top with a slice of brie.
- Top with a slice of fresh fig slice, drizzle with honey, sprinkle with a few thyme leaves and enjoy. (Tip: if figs aren't in season, use a pear or apple instead.)
