These steak bites and potatoes are the perfect family meal! Tender, juicy steak bites with garlic and herb-flavored potatoes will have you absolutely hooked. Bonus: it's ready in 30 minutes!
Heat a cast iron skillet to medium heat, add the olive oil and cut potatoes.
Stir the potatoes after 2-3 minutes and continue to cook until they are golden brown (about 8-10 minutes), stirring frequently to prevent sticking.
After 8 minutes, add the garlic, thyme, oregano, and 1/2 teaspoon kosher salt and finish cooking for an additional 2 minutes.
Once potatoes are fork-tender, remove them from the pan, along with the browned bits, and set them aside in a bowl.
Sear the Steak:
In the same pan, increase the heat to medium-high and add the remaining 1 tablespoon of olive oil along with 2 tablespoons of butter.
Once the butter has melted, add the steak bites and season with 1/2 teaspoon of kosher salt, or more to taste. Cook the steak pieces for at least 2 minutes before stirring.
Stir and cook until the steak is golden brown and seared on all sides for another 1-2 minutes.
Combine and Finish:
Add the cooked potatoes back into the pan with the steak. Stir to combine and cook for an additional 1-2 minutes.
Add any additional salt to taste. Top with chopped parsley and enjoy.
Notes
Potato options: Use other small potato varieties such as yellow, red, or fingerling potatoes. Make sure to cut the potatoes into small and even pieces to ensure they cook quickly.
Steak options: Use sirloin steak or New York strip as an option. Refrain from stirring the steak too early to allow it to sear properly before stirring.
