Instructions

- In the same pan, increase the heat and add more oil and butter. Once the butter has melted, add the steak bites and season with salt. Cook for 2 minutes without stirring.
- Stir the steak and cook until golden brown and seared on all sides. Add the cooked potatoes, cook for an additional 1-2 minutes, and serve.

Steak Bites and Potatoes
Ingredients
- 3 tablespoons olive oil, divided
- 1 pound Yukon Gold potatoes, cut into 1/2-inch cubes
- 4 cloves garlic, minced
- 1 teaspoon thyme, chopped or use dried
- 1/2 teaspoon oregano, chopped or use dried
- 1 teaspoon kosher salt, divided plus more to taste
- 2 tablespoons unsalted butter
- 1 1/4 pound ribeye steak, cut into 1/2-inch cubes
- 1 tablespoon parsley, finely chopped for garnish
Instructions
Cook the Potatoes:
- Heat a cast iron skillet to medium heat, add the olive oil and cut potatoes.
- Stir the potatoes after 2-3 minutes and continue to cook until they are golden brown (about 8-10 minutes), stirring frequently to prevent sticking.
- After 8 minutes, add the garlic, thyme, oregano, and 1/2 teaspoon kosher salt and finish cooking for an additional 2 minutes.
- Once potatoes are fork-tender, remove them from the pan, along with the browned bits, and set them aside in a bowl.
Sear the Steak:
- In the same pan, increase the heat to medium-high and add the remaining 1 tablespoon of olive oil along with 2 tablespoons of butter.
- Once the butter has melted, add the steak bites and season with 1/2 teaspoon of kosher salt, or more to taste. Cook the steak pieces for at least 2 minutes before stirring.
- Stir and cook until the steak is golden brown and seared on all sides for another 1-2 minutes.
Combine and Finish:
- Add the cooked potatoes back into the pan with the steak. Stir to combine and cook for an additional 1-2 minutes.
- Add any additional salt to taste. Top with chopped parsley and enjoy.
