- Brown the sausage: In the same skillet, cook the breakfast sausage over medium heat, breaking it up as it cooks, until browned and fully cooked. Drain any excess grease and set aside.


- Whisk the eggs: In a bowl, whisk together the eggs, milk, and salt until fully combined.
- Scramble the eggs: Cook the egg mixture over medium-low heat, stirring gently, until just set but still slightly soft. Remove from heat.


- Layer the sliders: Slice the rolls in half horizontally, keeping them connected, and place the bottom half in a parchment-lined baking dish. Evenly layer the scrambled eggs, sausage, and bacon over the rolls.
- Add the cheese: Place cheddar slices or shredded cheese evenly over the filling, then add the top half of the rolls.

- 1 pound breakfast sausage, loose
- 8 slices bacon
- 6 eggs, large
- ¼ cup milk
- 1 teaspoon kosher salt
- 6 slices cheddar cheese, (or 1½ cups shredded)
- 4 tablespoons unsalted butter, melted
- 1 tablespoon everything but the bagel seasoning
- 2 tablespoons chives, for topping
Instructions
- Preheat the oven to 350°F and line a baking dish or sheet pan with parchment paper.
- Cut the bacon into 2-inch pieces and cook in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate to drain.
- In the same skillet, cook the loose breakfast sausage over medium heat, breaking it up with a spoon, until browned and fully cooked, then drain any excess grease and set aside.
- In a bowl, whisk together the eggs, milk, and salt, then cook in a skillet over medium-low heat, stirring gently, until just set but still slightly soft, as they will finish cooking in the oven.
