These Hot Honey Beef Bowls have quickly become a go-to in my dinner rotation. I love how the spicy beef and hot honey balance the sweet potatoes, while cottage cheese and avocado make everything creamy and satisfying. No wonder it’s so viral!

Why This Recipe Works

I love these Hot Honey Beef Bowls when I want an easy dinner with plenty of flavor and texture.

  • Sweet and Spicy: Hot honey adds just the right balance of sweetness and heat to the smoky, seasoned beef, much like the bold flavors in my Korean Ground Beef Bowls.
  • Crispy Sweet Potatoes: Roasting or air frying gives the sweet potatoes tender centers and golden, caramelized edges. They’re such a good match for ground beef, just like in my Southwest Ground Beef Sweet Potato Skillet.
  • Creamy and Fresh: Full-fat cottage cheese and avocado add plenty of creaminess, while tomatoes, cilantro, and fresh lime keep each bite bright.
  • Easy for Weeknights: The beef cooks while the sweet potatoes roast, so everything comes together without much fuss. You can even air fry the potatoes when you want to save time.
  • Easy to Make Your Own: Swap in ground turkey or chicken, use Greek yogurt instead of cottage cheese, or pile on extras like jalapeños, black beans, or pickled red onions. It’s an easy bowl to customize with whatever you have on hand.

Ingredients

  • Sweet Potatoes – They roast until tender with golden, caramelized edges and add natural sweetness to the bowls. Yukon Gold potatoes, butternut squash, or cauliflower also work well.
  • Ground Beef – The hearty base of the bowls. I like using 90 to 93% lean ground beef for a good balance of flavor and juiciness, but ground turkey, chicken, or bison are easy substitutes.
  • Onion – Finely diced onion adds savory flavor and a little sweetness to the seasoned beef.
  • Spices and Seasonings – Chili powder, cumin, smoked paprika, garlic powder, dried oregano, and kosher salt give the sweet potatoes and beef their smoky, savory flavor.
  • Tomato Paste – Adds concentrated tomato flavor and richness to the beef. A little water helps it form a light sauce that coats the meat.
  • Cottage Cheese – Full-fat cottage cheese adds a cool, creamy contrast to the warm beef and sweet potatoes. Plain Greek yogurt, sour cream, whipped feta, or ricotta can be used instead.
  • Avocado – Adds another creamy element that works especially well with the spicy hot honey. You can swap it for guacamole, sliced cucumber, or shredded cabbage.
  • Cherry Tomatoes – Fresh, juicy tomatoes bring brightness and a bit of acidity to every bowl.
  • Hot Honey – The sweet and spicy finishing drizzle that ties all the flavors together. If you don’t have hot honey, combine regular honey with crushed red pepper flakes and add a pinch of cayenne for more heat.

  1. Slice the sweet potatoes: Cut the sweet potatoes into evenly sized wedges or cubes and toss with oil and seasonings.
  2. Fill the air fryer: Arrange the seasoned sweet potatoes in a single layer in the air-fryer basket.

  1. Air-fry until golden: Cook at 400°F for 13–15 minutes, shaking the basket halfway through.
  2. Cook the beef: Sauté the onion, then add the ground beef and cook until browned.

  1. Season the beef: Stir in the spices, tomato paste, and water, then cook until the beef is well coated.
  2. Assemble and serve: Divide everything among four bowls, add the toppings, and finish with hot honey and lime.

Substitutions & Variations

Here are some of my favorite substitutions and variations:

  • Protein Options: I usually make these bowls with ground beef, but you can also use ground turkey, chicken, or bison. I like 90 to 93% lean beef for a good balance of flavor and juiciness.
  • Cottage Cheese Swaps: I love full-fat cottage cheese for its creamy texture, but plain Greek yogurt, sour cream, ricotta, or whipped feta all work well. You can use whichever creamy option you prefer.
  • Sweet Potato Swaps: I like sweet potatoes for their caramelized edges and natural sweetness. You can also roast Yukon Gold potatoes, butternut squash, or cauliflower for the base.

What to Serve with Hot Honey Beef Bowls

FAQs

How spicy are Hot Honey Beef Bowls?

They have a mild to moderate heat that you can easily adjust. Start with a small amount of hot honey and add more at the table if you prefer a spicier bowl.

Can I make my own hot honey?

Absolutely. Mix 2 tablespoons of honey with ¼ teaspoon crushed red pepper flakes and let it sit for a few minutes before using. Add a small pinch of cayenne if you want extra heat.

Why aren’t my sweet potatoes getting crispy?

Overcrowding the baking sheet can cause the sweet potatoes to steam instead of caramelize. Cut them into evenly sized pieces and give them plenty of space on the pan so the edges can brown.

Are these Hot Honey Beef Bowls good for meal prep?

Yes, especially if you store the components separately. Prep the beef and sweet potatoes ahead, then add cottage cheese, avocado, tomatoes, cilantro, hot honey, and lime when you’re ready to eat.

What other toppings work well on these bowls?

Try pickled red onions, sliced jalapeños, black beans, corn, shredded cabbage, or crumbled feta. Crispy chickpeas, toasted pumpkin seeds, and lime crema are also good additions for extra texture.

How should I store and reheat Hot Honey Beef Bowls?

Store the cooked beef and sweet potatoes in airtight containers in the refrigerator for up to 3 to 4 days, preferably separate from the fresh toppings. Reheat the beef and potatoes in the microwave, skillet, or air fryer until hot, then add the cottage cheese, avocado, tomatoes, cilantro, lime, and hot honey just before serving.

Ingredients

Roasted Sweet Potatoes:

  • 4 sweet potatoes, washed and cut into wedges
  • 1 ½ tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder

Seasoned Beef:

  • 1 pound lean ground beef, I like 80-20 but use your fave
  • 1 ½ tablespoons olive oil
  • 1 onion, small, finely diced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 tablespoon tomato paste
  • ¼ cup water

For the Bowls:

  • 2 cups cottage cheese, full-fat
  • 1 avocado, large, sliced or diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup cilantro, chopped
  • 2 tablespoons hot honey, or more to taste
  • 1 lime, cut into wedges
  • flaky sea salt, optional

Instructions

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  • Place the sweet potatoes in a large bowl. Drizzle with the olive oil, then sprinkle with the kosher salt, smoked paprika, garlic powder, cumin, and chili powder. Toss until evenly coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not crowded. Roast for 25 to 30 minutes, tossing halfway through, until tender in the center and caramelized and golden around the edges.
  • Alternatively, preheat an air fryer to 400°F and cook the seasoned sweet potatoes in a single layer for 13 to 15 minutes, shaking the basket halfway through. Cooking time will vary depending on the size of the sweet potatoes and the air fryer.
  • While the sweet potatoes cook, heat the olive oil in a large skillet over medium-high heat. Add the onion and cook for 2 to 3 minutes, until softened.
  • Add the ground beef and break it apart with a wooden spoon. Let it cook undisturbed for about 2 minutes to develop browning, then continue breaking it apart and cooking for 5 to 7 minutes, until browned and cooked through. Drain any excess grease from the skillet.
  • Add the chili powder, cumin, smoked paprika, garlic powder, oregano, and kosher salt. Stir until the beef is evenly coated.
  • Add the tomato paste and water, stirring well. Cook for another 1 to 2 minutes, until the sauce has reduced slightly and coats the beef. Taste and adjust the seasoning if needed.
  • Divide the cooked sweet potatoes and seasoned beef among four bowls. Add about ½ cup cottage cheese to each bowl, followed by the avocado and cherry tomatoes.
  • Sprinkle each bowl generously with cilantro.
  • Drizzle with hot honey and finish with a squeeze of fresh lime. Add a pinch of flaky sea salt if desired, then serve warm.

Notes

  • Do not overcrowd the sweet potatoes. Giving them plenty of room helps create crispy, caramelized edges.
  • Cut the sweet potatoes evenly so they cook at the same rate.
  • Let the beef sit against the hot skillet for a couple of minutes before stirring to develop better browning and flavor.
  • Use full-fat cottage cheese for the creamiest texture.
  • Add the hot honey at the end to keep its sweet and spicy flavor bright.
  • Start with 2 tablespoons of hot honey and add more depending on how spicy you like it.
  • Do not skip the lime. Its acidity balances the richness of the beef and cottage cheese and the sweetness of the sweet potatoes and honey.
 

Make-Ahead and Storage

Prepare the sweet potatoes and beef ahead of time and store them separately in airtight containers in the refrigerator for up to four days. Keep the cottage cheese, avocado, tomatoes, and hot honey separate, then assemble the bowls just before serving.
Reheat the beef and sweet potatoes in the microwave for 1 to 2 minutes or in a skillet over medium heat until heated through. Add the cottage cheese, avocado, tomatoes, cilantro, hot honey, and lime after reheating.
