  • Cocoa Powder, Powdered Sugar, or Finely Chopped Nuts – Used for coating the truffles. Cocoa gives a classic finish, powdered sugar adds sweetness, and nuts bring a bit of crunch and texture.

Instructions

  1. Heat Cream: In a small saucepan, warm the heavy cream over medium-low heat until it just begins to simmer. Do not let it boil.
  2. Dissolve Espresso: Stir in the instant espresso powder until fully dissolved, infusing the cream with rich coffee flavor.

  1. Melt Chocolate: Place the finely chopped chocolate in a heat-safe bowl. Pour the hot espresso cream over it and let it sit for 2 minutes to soften the chocolate.
  2. Stir Until Smooth: Gently stir the mixture until it becomes silky and smooth. Add the vanilla extract and a pinch of flaky salt, stirring to combine.

  1. Chill Mixture: Cover the bowl and refrigerate for about 1 hour, or until the mixture is firm enough to scoop.
  2. Shape Truffles: Scoop tablespoon-sized portions and roll them into balls. If the mixture is sticky, dust your hands lightly with cocoa powder.

Here are some of my favorite substitutions and variations:

  • Chocolate Choices: I like using dark chocolate for a bold flavor, but milk chocolate makes them a little softer and sweeter. You can even mix the two for a balanced taste.
  • Flavor Add-Ins: Try adding a splash of coffee liqueur or a bit of orange zest for a different twist. A drop of almond or peppermint extract also works nicely.
  • Coating Options: I usually roll mine in cocoa powder, but crushed nuts or shredded coconut add great texture. You can also drizzle them with melted chocolate for a smooth finish.
  • Topping Ideas: Sprinkle a little flaky sea salt on top before chilling. It gives a nice contrast to the rich chocolate.

FAQs

Do I need to use instant espresso powder?

The espresso powder enhances the chocolate flavor, but you can leave it out if you prefer. If you want a milder coffee note, use half the amount or substitute with instant coffee granules.

Can I add other flavors to the truffles?

Absolutely. A splash of coffee liqueur, a pinch of cinnamon, or a bit of orange zest all work well. You can also roll them in coconut or drizzle with melted chocolate for variety.

Why is my chocolate mixture grainy?

These Espresso Chocolate Truffles are rich, silky, and packed with deep chocolate flavor and a hint of coffee. Made with just a few ingredients, they’re an easy no-bake dessert perfect for gifting, entertaining, and especially Valentine's Day.

Ingredients

  • 8 oz semi-sweet chocolate, or dark chocolate, finely chopped
  • ½ cup heavy cream
  • 1 teaspoon instant espresso powder
  • 1 teaspoon vanilla extract
  • 1 pinch flaky salt
  • cocoa powder, powdered sugar, or finely chopped nuts (for coating)

Instructions

  • Heat the heavy cream in a small saucepan over medium-low heat just until it begins to simmer, being careful not to let it boil, then stir in the instant espresso powder until fully dissolved.
  • Place the chopped chocolate in a heat-safe bowl, pour the hot cream over it, and let it sit undisturbed for about 2 minutes.
  • Gently stir the mixture until smooth and silky, then stir in the vanilla extract and flaky salt.
  • Cover the bowl and refrigerate for about 1 hour, or until the mixture is firm enough to scoop.
  • Scoop tablespoon-sized portions of the chilled mixture and roll them into balls, lightly dusting your hands with cocoa powder if the mixture becomes sticky.
  • Roll the truffles in cocoa powder, powdered sugar, or finely chopped nuts, then refrigerate until ready to serve.

Notes

  • Chop the chocolate finely so it melts evenly when the warm cream is poured over it. Large chunks can leave small unmelted bits.
  • Let the cream sit on the chocolate for a couple of minutes before stirring. This helps the chocolate soften and blend smoothly.
  • Stir gently with a spatula instead of whisking to keep the ganache silky and free of air bubbles.
  • If the mixture looks too soft after chilling, refrigerate it a bit longer until it’s firm enough to scoop.
