This Tater Tot Breakfast Casserole has everything I love about a big breakfast, all baked in one pan. The eggs stay soft, the cheese melts just right, and the tots get perfectly crisp on top. It’s comfort food that never disappoints. Easily prep it ahead!

Ingredients

  • Tater Tots – The crispy base of the casserole that gives it that golden, crunchy top. You can use frozen tots straight from the bag—no need to thaw.
  • Bacon – Adds a smoky, salty flavor that balances the richness of the eggs and cheese. Turkey bacon works too if you prefer something lighter.
  • Sausage Patties – Brings hearty, savory flavor to the dish. You can use breakfast sausage links or ground sausage instead.
  • Bell Peppers – Add color, sweetness, and a bit of freshness. I like using shishito peppers for a mild flavor, but any bell pepper works.
  • Jalapeño – Optional, but great if you want a little heat. You can leave it out or swap for a pinch of red pepper flakes.
  • Mozzarella Cheese – Melts beautifully and gives the casserole a creamy texture. Cheddar or Monterey Jack are good substitutes.
  • Onion – Adds depth and a touch of sweetness once sautéed with the bacon. Yellow or white onions both work well.
  • Green Onions – Used for both flavor and garnish, they add a mild, fresh bite that brightens the dish.
  • Eggs – The binding element that holds everything together and gives the casserole its soft, custardy texture.
  • Whole Milk – Keeps the eggs light and creamy. You can use half-and-half for a richer result or 2% milk if that’s what you have.

Instructions

  1. Cook Bacon and Onion: In an oven-safe heavy-bottomed pan (like a 3.5 qt Le Creuset or 12″ skillet), add bacon, diced onion, and ½ teaspoon salt. Sauté over medium-high heat for about 7 minutes until the bacon is crisp and the onions are soft.
  2. Add Sausage and Peppers: Stir in the chopped sausage, diced bell peppers, and another ½ teaspoon of salt. Cook for 3 minutes until everything is lightly browned and fragrant.
  1. Whisk Eggs and Milk: In a mixing bowl, whisk together the eggs, 1½ teaspoons salt, and milk until smooth and combined. Set aside.
  2. Layer Cheese and Tater Tots: Sprinkle 1 cup of mozzarella cheese over the cooked bacon, sausage, onion, and peppers. Arrange tater tots in a circular pattern on top until the pan is filled.
  1. Add Egg Mixture: Pour the egg and milk mixture evenly over the tater tots. Sprinkle ½ cup of chopped green onions on top.
  2. Bake: Place the pan uncovered on the top rack and bake for 20–25 minutes until the eggs are set.
  1. Add Toppings: Remove from the oven, sprinkle the remaining 1 cup of mozzarella cheese, and top with sliced jalapeños if using. Bake for another 5 minutes until the cheese is melted and bubbly.
  2. Finish and Serve: Remove from the oven and top with the remaining ¼ cup of green onions. Spoon onto plates and serve hot with a side salad and your favorite hot sauce.

Here are some of my favorite substitutions and variations:

  • Protein Options: I like using both bacon and sausage for a mix of flavor, but you can stick with just one if you prefer. Try diced ham, turkey sausage, or even leftover rotisserie chicken for something different.
  • Cheese Choices: Mozzarella melts beautifully, but cheddar, pepper jack, or Monterey Jack all work great too. You can even mix a few for extra cheesiness.
  • Veggie Add-Ins: I love adding diced mushrooms, spinach, or zucchini for more color and texture. Just sauté them first so they don’t release too much moisture.

Layers of tater tots, eggs, sausage, and cheese make up this Tater Tot Breakfast Casserole Recipe. Whip it up for a comforting family breakfast or a crowd-pleasing brunch. Ready in less than an hour and easy to make ahead of time!

Ingredients

  • 4 cups tater tots
  • 6 slices bacon, cut into 1” pieces
  • 6 sausage patties, cubed
  • 1 ½ cups bell peppers, I used shishito peppers, diced
  • 1 small jalapeño, thinly sliced, optional
  • 2 cups mozzarella cheese, divided
  • 1 large onion, diced
  • ¾ cup green onions, chopped
  • 8 eggs
  • 1 ½ cup whole milk
  • ½ tbsp kosher salt

Instructions

  • Preheat the oven to 375° F. Move the wire rack to the top of the oven.
  • In an oven-safe heavy bottomed pan (I used my 3.5 qt Le Creuset-12" pan), add the bacon, onion and ½ teaspoon salt. Sauté for 7 mins on medium-high heat.
  • Add chopped sausage, peppers, and another 1⁄2 teaspoon of salt into the pan. Cook for an additional 3 mins.
  • In a bowl whisk the eggs and 1 ½ teaspoon of salt. Then add the milk. Whisk until combined. Set aside.
  • Add one cup of mozzarella cheese on top of the cooked bacon, sausage, onion and peppers.
  • Layer tater tots in a circular design until the pan is filled.
  • Add egg and milk mixture. Top with ½ cup of green onions.
  • Bake uncovered on the top rack of your oven for 20-25 minutes, take out of the oven, add the remaining cup of mozzarella cheese, and top with jalapeños (optional). Bake for an additional 5 mins or until the cheese is melted.
  • Remove, top with remaining ¼ cup of green onions. Spoon out onto plates, serve with a side salad and your favorite hot sauce. Enjoy it while it’s hot.

Notes

  • Cook the meat and veggies first. This helps remove excess moisture so the casserole bakes up firm instead of soggy.
  • Use frozen tater tots. They crisp up better in the oven and hold their shape while baking.
  • Don’t skip the top rack. Baking on the top rack helps the tots brown evenly and stay crispy.
  • Whisk the eggs well. A smooth egg mixture ensures even texture and prevents any rubbery spots.
  • Add cheese in layers. Mixing cheese between the meat and tots gives every bite a melty, flavorful finish.
  • Let it rest before serving. Give the casserole 5 minutes to set after baking so it slices cleanly.
  • Make it ahead. Assemble everything except the eggs and tots the night before, then bake fresh in the morning.
  • Reheat gently. Warm leftovers in a 300°F oven for about 10 minutes to keep the tots crisp.

    This is a new family staple! SO good! And Lena suggested using the leftovers in burritos to freeze for my family! Such a great idea and so simple!!!!!!
