Instructions

  1. Heat the Oil: Warm olive oil in a large saucepan over high heat.
  2. Cook the Beans: Add green beans, reduce heat to medium-high, and cook for 8–10 minutes, tossing occasionally.
  3. Add Garlic: Stir in minced garlic and sauté for 1 minute until fragrant.
  4. Season and Serve: Sprinkle with sea salt to taste and serve warm.

Here are some of my favorite substitutions and variations:

  • Green Bean Options: I love using French-style green beans (Haricots Verts) for their elegant shape and extra snap, but regular green beans work just as well. Just try to choose ones that are slim and uniform in size for even cooking.
  • Add Citrus or Acid: Add a splash of lemon juice or a sprinkle of zest at the end to brighten things up. A drizzle of balsamic glaze or red wine vinegar works great for more depth.

These French Style Green Beans are crisp, quick, and full of flavor. A simple sauté in olive oil and garlic turns them into an elegant side dish that goes with everything.

Ingredients

  • 1 lb French green beans, Haricots Verts, rinsed and dried
  • 2 tbsp extra light olive oil
  • 2 cloves garlic, minced
  • sea salt, to taste

Instructions

  • Heat the olive oil in a saucepan on high heat.
  • Add in the green beans and turn the burner down to medium-high heat. Cook the beans for 8-10 minutes, folding the beans on the bottom to the top once.
  • Add the garlic and sauté for 1 minute.
  • Season will salt and enjoy.

Notes

  • French green beans, also known as Haricots Verts, are thinner and more tender than regular green beans and cook quickly while staying crisp.
  • Make sure the green beans are rinsed and dried well before cooking to prevent splattering when they hit the hot oil.
  • Heat the oil fully before adding the green beans so they sauté instead of steaming.

    I have made these green beans twice now and they are the best! Because my family doesn’t like the traditional green bean casserole for thanksgiving dinner- we are having this green bean dish- a new tradition for our thanksgiving dinner!
