- Ground Beef – Hearty and flavorful, ground beef is the protein base of this bowl. It’s cooked with onions, garlic, and homemade taco seasoning for bold, savory flavor. You can also swap in ground turkey, chicken, or plant-based alternatives.
- Onion and Garlic – These aromatics add depth and richness to the meat mixture. Sautéing them first builds the flavor foundation for the whole dish.
- Easy Homemade Taco Seasoning – A custom blend of spices gives the beef its smoky, zesty flavor. It’s naturally gluten-free and easy to batch prep.
- Iceberg Lettuce – Crisp and refreshing, iceberg lettuce adds crunch and freshness to balance the richness of the meat and crema.
- Tomatoes, Radishes, Cilantro, and Pickled Onions – These toppings bring color, texture, and brightness. Pickled onions add a tangy bite, while fresh cilantro gives the bowls a herby finish.
- Yogurt Lime Crema – Made with Greek yogurt, lime juice, and garlic powder, this creamy sauce is light, tangy, and perfect for drizzling. It ties everything together and can be customized with dairy-free yogurt if needed.

Instructions



- Make the Crema: In a bowl, whisk together Greek yogurt, lime juice, salt, garlic powder, and water until smooth. Set aside.
- Sauté the Veggies: Heat olive oil in a large pan over medium heat. Sauté chopped onion for 5–7 minutes, then add garlic and cook for 1 more minute.
- Cook the Meat: Add ground beef to the pan and break it up with a spatula. Cook until browned, about 7 minutes, then stir in taco seasoning and cook for 3 more minutes.
- Prep the Toppings: Chop lettuce, tomatoes, radishes, and cilantro. Set out pickled onions or any additional toppings you like.
- Assemble and Serve: Layer lettuce in bowls, top with taco meat, veggies, and crema. Finish with extra taco seasoning or fresh herbs if desired.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Protein Swaps: I usually go with ground beef, but ground chicken, turkey, or even tofu all work well. If you want a plant-based option, try seasoned garbanzo beans.
Seasoning Options: My homemade taco seasoning keeps it bold and balanced, but store-bought works in a pinch. - Crema Alternatives: I like using Greek yogurt for the base, but sour cream or dairy-free yogurt both work well. Or swap in chimichurri, romesco, or your favorite salsa.

What to Serve with Healthy Taco Bowls

- These healthy taco bowls are packed with flavor and filling enough to stand alone, but they’re also a great base for serving alongside Carne Asada, Shrimp Tostadas, or Grilled Cilantro Lime Chicken Thighs for a bigger spread.

Healthy Taco Bowls
Ingredients
Meat Mixture
- 2 lbs 80/20 ground beef, or any ground meat
- 1 large onion, chopped
- 3 cloves garlic, finely chopped
- 2 tbsp olive oil
- 6-8 tbsp Easy Homemade Taco Seasoning
- Salt as needed
Salad & Toppings
- 1 head of iceberg lettuce
- tomatoes, cut into pieces
- Lena's Kitchen Pickled Onions
- cilantro
- radishes
Yogurt Lime Crema
- 1/2 cup plain Greek yogurt or sour cream
- 1/2 lime, juiced
- 1/2 tsp sea salt
- 1 tsp garlic powder
- 1-2 tbsp water, to thin out the sauce
Instructions
Yogurt Lime Crema
- Add all ingredients to a bowl and whisk to combine. Set aside until you're ready to assemble your taco bowls.
Healthy Taco Bowls With Mexican Beef
- Sauté the onion in a large frying pan for 5-7 minutes on medium heat. Add garlic and sauté another minute.
- Add meat to the pan and break it down using a spatula. Sauté until no red meat is visible, about 7 minutes.
- Stir in the taco seasoning and cook for another 3 minutes to combine the flavors.
- Assemble the taco bowls: cut the lettuce into wedges, and add the meat. Top with chopped tomatoes, radishes, and cilantro, then drizzle yogurt lime crema overtop. Finish with a sprinkle of taco seasoning.
Notes
- Use any ground meat you prefer, such as beef, chicken, turkey, or plant-based alternatives like tofu or seasoned chickpeas.
- For meal prep, cook a large batch of the meat mixture and store it in the fridge for up to 4 days.
- Store chopped vegetables and toppings in separate containers to keep them fresh throughout the week.
- Customize your bowls with your favorite toppings like avocado, jalapeños, roasted veggies, or pickled onions.
- Thin the crema with a little water until it reaches a pourable consistency, then drizzle over the bowls.
