Can you believe we are just a few weeks away before the year is over? And christmas is next week. Where has this year gone? We are about to say goodbye to 2018. I just celebrated my birthday as will be enjoying my last year of being in my 30’s… insert emotional emoji here. It’s ok, I’m not crying, you’re crying.

One of my favorite things around this time of the year is hosting friends and family at our home. Nothing gives me greater pleasure than sharing something that I truly love doing with them. Serving people is something I really enjoy doing.
When I host, I like to have a signature simple cocktail that can be thrown together easily ahead of time and then mixed when guests arrive. Served along a small appetizer or a cheese board.

The inspiration for this cocktail came from my love of Mojitos. You take the refreshing flavors of berries, lime and mint combo. Top with some prosecco and bam, you get a delicious cocktail in minutes.
To make these Blackberry Mint Cocktails, I made a blackberry-mint muddle with fresh blackberries, mint leaves, sugar, a touch of cherry 7UP and lime juice, can be made ahead of time. This creates a nice depth of flavor to then top with prosecco. The recipe is enough to make a few cocktails, but you can easily scale the recipe up or down as needed.

There is no appetizer more perfect than this simple assembly of mini toasts or cracker and goat cheese topped with a big, fresh, juicy blackberries and a drizzle of mild honey with a sprinkle of thyme.
With these Blackberry Goat Cheese Mini Toasts you get the perfect combination of sweet, savory and tart. You won’t be able to resist them, they are so good. You might need more than one or two, I promise.

Blackberry Mint Cocktail
Ingredients
Blackberry-Mint Cocktail
- 1 bottle Brut Prosecco
- ¼ cup 7UP® Cherry Soda
Blackberry-Mint Muddle
- 1 cup blackberries
- 6 leaves mint
- 1 tbsp sugar
- 1 lime, juiced
Garnishes
- 4 blackberries
- 4 sprigs mint
- 1 lime, quartered
Instructions
Blackberry-Mint Muddle
- Muddle together all the ingredients at the bottom of a mixing glass. Divide 2 tbsp each between serving glasses.
Assemble Cocktail
- Add blackberry-mint muddle to bottom of glass, add ice. Top with Ogio prosecco, stir and garnish with blackberry, mint and lime on a toothpick.

Blackberry Goat Cheese Mini Toasts
Ingredients
- 16 petite toasts , or crackers
- 8 blackberries, cut in half
- 2 ounces goat cheese
- 2 tablespoons honey
- 1 tablespoon thyme leaves
Instructions
- Spread goat cheese on mini toasts or crackers. Cut blackberries in half and lay cut side up. Drizzle with honey and sprinkle with thyme leaves. Serve with cocktails.
