- Butter Lettuce – The star of our salad, butter lettuce is known for its tender, cup-shaped leaves, which provide the perfect base for the rest of the ingredients.
- Creamy Dill Dressing – This dressing is what takes our salad to the next level. Made with mayonnaise, Greek yogurt, heavy cream, lemon, Dijon mustard, and dill, it’s creamy, tangy, and packed with fresh, herby flavors.
- Fresh Corn – The kernels of sweet corn add a pop of juicy sweetness and a slight smokiness, thanks to being charred.
- Prosciutto – I love the salty, savory flavor that prosciutto adds to this salad. It’s a delicious contrast to the creamy dressing and the sweet corn.
- Freshly Grated Parmesan Cheese – It adds a salty, nutty flavor that brings all the ingredients together.

Instructions


- Make the Dressing: In a jar or bowl, whisk together the mayonnaise, yogurt, lemon juice and zest, Dijon, grated garlic, dill, and kosher salt until smooth.
- Char the Corn: Set the corn cobs over a gas burner on high (or under a broiler) and roast, turning occasionally, until charred all over, about 4 minutes.


- Crisp the Prosciutto: Place prosciutto slices on a baking sheet in a single layer and broil on high until golden, about 1–2 minutes. Flip and broil for another minute until crispy.
- Crumble the Prosciutto: Remove the prosciutto from the oven, transfer to a plate, and crumble into bite-sized pieces.


- Assemble the Salad: Arrange the lettuce on a large platter or in a salad bowl.
- Drizzle Dressing: Drizzle some dressing on top of each lettuce cup.


- Layer Corn, Prosciutto, and Radishes: Next, add some grilled corn kernels, crumbled prosciutto, and sliced radishes on top of each lettuce cup.
- Sprinkle Parmesan: Finish off by sprinkling freshly grated Parmesan cheese on top and serve.

Substitutions & Variations
- Greens: Butter lettuce is our favorite for this salad, but feel free to use any other type of lettuce or mixed greens. Spinach would work great too.
- Protein: Instead of prosciutto, try crispy bacon or pancetta. For a vegetarian option, grilled tofu or tempeh would be a delicious substitute.
- Veggies: Try grilling or roasting the radishes for a different flavor. You can also add other veggies like cucumbers, cherry tomatoes, or bell peppers.
- Cheese: If you’re not a fan of Parmesan, feta cheese or goat cheese would be great substitutes.

FAQs
I recommend using fresh sweet corn on the cob for this salad. You can either grill it, boil it, or even use leftover corn on the cob. Canned or frozen corn won’t give you that same fresh, sweet, charred flavor, so I highly recommend using fresh corn.
Absolutely! You can make the creamy dill dressing up to 3 days in advance. Simply store it in an airtight jar or container in the fridge. Give it a good shake or stir before using it on your salad.
If you have any leftover salad, it’s best to store the lettuce and the other ingredients separately from the dressing. The assembled salad will keep in the refrigerator for up to 2 days. The dressing can be kept in a sealed container for up to 5 days. When ready to eat, simply toss the lettuce and other ingredients with the dressing.

Butter Lettuce Salad
Ingredients
For the Creamy Dill Dressing:
- ⅓ cup mayonnaise
- ⅓ cup greek yogurt
- ¼ cup heavy cream, or more for thinner dressing
- ½ lemon, zested and juiced (add more if needed)
- 1 ½ teaspoons dijon mustard
- 2 tablespoons dill, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt, or more to taste
For the Salad:
- 2 ears corn, charred
- 6 slices prosciutto
- 1 head butter lettuce, leaves separated
- 4 radishes, thinly sliced
- ¼ cup freshly grated Parmesan cheese
Instructions
Make the Dressing
- Prepare the dressing by whisking together the mayonnaise, yogurt, lemon juice and zest, dijon, grated garlic, dill and kosher salt until smooth in a jar or bowl.
Prep the Salad
- Set the cobs of corn over a gas burner on high heat (or on a baking sheet in the oven set to broil on high). Roast until the corn is charred all over, turning occasionally, about 4 minutes total. Remove to a cutting board and cut the kernels off the cob, trying to keep them in chunks.
- Heat the oven to broil on high. Add the slices of prosciutto on a baking sheet in a single layer. Broil until the prosciutto is golden, about 1 to 2 minutes or until crispy.
- Flip the prosciutto with tongs and continue to broil until crispy, about an additional minute. Be sure to check on the prosciutto frequently so it does not burn.
- Remove to a plate and crumble the prosciutto. Set aside until ready to use.
- Assemble the salad by adding the lettuce to a large platter or salad bowl. Drizzle some of the dressing on top.
- Layer in with the crumbled prosciutto, corn, radish slices and Parmesan cheese. Drizzle some more dressing and serve immediately.
Notes
- This salad is best served immediately after dressing to keep the lettuce crisp. If making ahead, keep the dressing and salad components separate until ready to serve.
- Feel free to customize your salad with your favorite ingredients. Avocado, cherry tomatoes, or even grilled chicken can be great additions to this butter lettuce salad.
