Instructions


- Prep the Chicken: Remove skin and bones from rotisserie chicken and shred or chop into bite-sized pieces.
- Add Dressing to Bowl: In a large bowl, add mayonnaise, Dijon, lemon juice, tarragon, and salt.


- Whisk Dressing: Whisk dressing ingredients until well combined.
- Combine and Serve: Add the chicken, diced apple, celery, and cranberries to the bowl and gently toss to coat. Chill and serve.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Creamy Base: Mayonnaise is a classic, but I often mix in a few spoonfuls of plain Greek yogurt to lighten it up and add tang. Sour cream works as another creamy substitute.
- Crunch Factor: Celery adds great texture, but you could swap in chopped walnuts or pecans.
- Boost the Flavor: A finely minced shallot or a pinch of garlic powder can take the flavor up a notch. These small additions go a long way in rounding out the taste.

- 2 breasts rotisserie chicken, finely shredded or chopped
- ½ cup mayonnaise, or more to taste
- 1 tablespoon Dijon mustard, or more to taste
- ½ lemon, juiced
- 2 tablespoons fresh tarragon, finely chopped (or ½ teaspoon dried)
- 1 teaspoon kosher salt, or more to taste
- 1 small apple, finely diced (Honeycrisp or Fuji)
- 2 stalks celery, finely diced
- ⅓ cup dried cranberries, roughly chopped
Instructions
- Remove skin and bones from the rotisserie chicken and chop or shred into bite-size pieces.
- In a large bowl, whisk together the mayonnaise, mustard, lemon juice, tarragon, salt.
- Into the bowl with the dressing, add the shredded chicken, diced apples, cranberries, and diced celery. Gently toss to coat evenly.
- Refrigerate for at least 30 minutes to allow the flavors to meld.
- Great on sandwiches, in wraps, or over mixed greens.
Notes
- Use rotisserie chicken for convenience. Remove the skin and bones, then shred or chop the meat into small, even pieces.
