This Kale Caesar Salad is my answer to the soggy romaine version we’ve all had one too many times. The hearty kale holds up beautifully to the creamy dressing and stays fresh for days. It’s the kind of salad that actually gets better with time.

Why This Recipe Works
I make this Kale Caesar Salad whenever I want something fresh, hearty, and full of flavor that actually lasts in the fridge. Here’s what makes it special:
- Bold, Creamy Flavor: The homemade Caesar dressing clings to every leaf, giving you that rich, garlicky flavor in every bite – just like in my Radicchio Caesar Salad with Toasted Garlic Panko.
- Hearty Greens That Hold Up: Unlike romaine, kale keeps its texture even after being dressed. It softens just enough to be tender but never soggy, which makes it perfect for meal prep or potlucks.
- Crispy Bacon Croutons: The bacon fat gives the croutons a savory crunch that’s hard to beat. They add a little smoky bite that makes this salad feel extra satisfying.
- Easy to Customize: You can make it your own with grilled chicken, avocado, or even chickpeas. If you love mixing things up, you’ll also enjoy the variety in my Chicken Caesar Pasta Salad.
- Perfect for Any Occasion: This salad works just as well for a quick weekday lunch as it does for a dinner party side. It’s simple, reliable, and always a hit.

Ingredients
- Kale – I like using Lacinato (also called dinosaur or Tuscan) kale because its flat leaves are easier to soften and have a mild, earthy flavor. Curly kale works too, but it may need a bit more massaging.
- Parmesan Cheese – Freshly shaved parmesan adds a salty, nutty flavor that complements the creamy dressing. You can use grated parmesan or even pecorino romano if that’s what you have.
- Homemade Caesar Dressing – The creamy, garlicky dressing brings everything together. It coats the kale perfectly and helps tenderize the leaves. Store-bought Caesar dressing works in a pinch.
- Thick-Cut Bacon – Crisped bacon adds a smoky, savory crunch to the salad. If you prefer a vegetarian version, skip the bacon and use unsalted butter for the croutons instead.
- Bread – Torn pieces of bread soak up the bacon fat (or butter) and toast into golden, crunchy croutons. Any sturdy bread like sourdough or ciabatta works best.

Instructions

- Prep Kale: Remove the stems from the kale. Rinse the leaves thoroughly, then pat dry or spin in a salad spinner.
- Massage Kale: Slice into ¼-inch pieces and place in a large mixing bowl. Pour the Classic Homemade Caesar Dressing over the chopped kale. Use your hands to gently massage the dressing into the leaves until they soften and wilt slightly. Let the kale sit for 5–10 minutes to absorb the flavors.

- Cook Bacon: In a skillet, add the 1-inch bacon pieces and cook over medium heat until crisp. Transfer the bacon to a paper towel-lined plate to drain.
- Make Croutons: In the same pan with the bacon fat, add the torn bread pieces. Toast over medium heat, tossing often, until golden and crisp. If skipping bacon, use unsalted butter instead of bacon fat.

- Assemble Salad: Add the dressed kale to a serving platter. Top with crispy bacon pieces, warm croutons, and freshly shaved parmesan.
- Serve & Enjoy: Toss lightly before serving. Enjoy as a hearty side or pair with your favorite protein for a complete meal.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Protein Options: I like to top this salad with grilled chicken, roasted salmon, or even crispy tofu for a full meal. You can also add hard-boiled eggs or shrimp if you want extra protein.
- Crouton Swaps: Not into bacon? Toast the bread in butter or olive oil instead. For something different, try crispy chickpeas or crushed pita chips.
- Cheese Choices: Parmesan is classic, but shaved pecorino or asiago work just as well. You can even sprinkle a little feta for a tangy touch.

FAQs
Yes. Lacinato (or dinosaur) kale is my favorite because it’s tender and easy to massage, but curly kale works well too. Just make sure to massage it a little longer so it softens nicely.
You can skip the bacon and make the croutons in butter or olive oil instead. The salad will still have great texture and flavor. For a plant-based option, try crispy chickpeas or vegan bacon.
Absolutely. While homemade caesar dressing gives the best flavor, a good-quality store-bought Caesar works fine. Just taste and adjust the seasoning before adding it to the kale.
Massage the dressing into the kale with your hands for a few minutes. This helps break down the fibers and makes the leaves tender and easier to eat.
Store leftovers in an airtight container in the fridge for up to 3–4 days. The kale holds up well, but keep the croutons separate until serving so they stay crisp. Reheat the bacon briefly in a skillet if you want it warm again.

Kale Caesar Salad
Ingredients
- 1 bunch kale, I prefer Lacinato (dinosaur/tuscan) Kale, stem removed and finely chopped
- ¼ cup parmesan cheese, freshly shaved
- 4 tbsp Caesar dressing, I prefer using homemade Caesar dressing, but store-bought works too
- 6 pieces bacon, thick-cut, cut into 1” pieces or replace with 3 tbsp unsalted butter
- 1 ½ cup bread, torn into smaller pieces
Instructions
- Remove the stems from the kale. Rinse and pat dry or spin in a salad spinner.
- Slice into 1/4 inch pieces and place them in a large bowl.
- In a pan, add 1” bacon pieces and cook until they're crisped to your liking. Transfer the bacon to a paper towel-lined plate.
- In the same pan with the bacon fat, cook the torn pieces of bread until toasted and browned. Toss often to coat with bacon fat. If you don’t like bacon, use unsalted butter instead.
- Pour my Classic Homemade Caesar Dressing over top. Massage the leaves with your hands until they're wilted and softe. Let the dressing and kale sit for at least 5-10 minutes while you make the bacon and croutons.
- Add the dressed salad to a serving platter and add the bacon pieces, croutons, and freshly shaved parmesan on top. Enjoy with your favorite protein.
Notes
- Remove the kale stems before chopping. They’re tough and fibrous, so skipping them makes the salad more tender.
- Dry the kale completely after washing. Excess water will dilute the dressing and make the salad less flavorful.
- Massage the dressing into the kale for a few minutes. This softens the leaves and helps them absorb the creamy Caesar flavor.
- Let the dressed kale rest for 5–10 minutes before serving. It gives the leaves time to tenderize and soak up the dressing.
- Use day-old bread for the croutons. It toasts better and holds its crunch when coated in bacon fat or butter.
- Keep the croutons separate if making ahead. Add them just before serving so they stay crisp.
- Shave the parmesan fresh. It melts slightly into the warm croutons and adds a rich, nutty flavor.
- Swap bacon for butter or olive oil if you prefer a vegetarian version. The croutons will still be golden and flavorful.
- Store leftovers in an airtight container for up to 3 days. The kale stays crisp, making it perfect for meal prep.
- Add your favorite protein like grilled chicken, salmon, or tofu to turn this salad into a complete meal.

This is now my new favorite way to eat caesar salad!! It was so delicious, I added extra garlic and herbs to the dressing, and I topped the salad with pickled onions. I even ate the leftovers for breakfast the next day and it may have tasted even better !
