This pan-fried halloumi & peach salad on a bed of arugula is the summer salad I can’t get enough of. Topped with homemade basil oil for the most vibrant of flavors, I have no doubt you will love this salad.
I’ve been working on some fun and easy summer dinner recipes, so when I had the chance to work with Wolf Gourmet products, specifically their 8.5” inch skillet and high-performance blender, I decided to create a delicious warm-weather salad.

This recipe makes more oil than you need, which is fine because you will want to put it on everything. Pairing these with the saltiness of halloumi is the perfect marriage of flavors. Addition of the vibrant flavor of basil oil marries the flavors together perfectly. It’s the perfect summer bite. I got to spend some time in Greece after my college graduation, which is where I first tasted halloumi by the beach at a small restaurant.
I was smitten by the salty flavor right away. If you haven’t tasted this cheese, it’s a close flavor to feta, but not crumbly. Pairing it with the sweetness of the peaches and peppery flavor of arugula is the perfect marriage of flavors. It’s easy to find in the gourmet cheese section of your grocery store.Pan frying halloumi creates a different texture in the cheese, which I love. The crispy bits are my favorite to snack on after they are out of the pan. So if you like those bits too, don’t throw them away.
