Have you ever wanted to eat pizza for breakfast? Me too! With my simplified version of a classic Khachapuri or Georgian Cheese Bread, now you can.
Made with your choice of homemade or store-bought pizza dough, this recipe quickly comes together and is sure to wow your guests. A literal boatload of flavor, you can’t go wrong with cheese, butter, and eggs surrounded by fresh bread for dipping.

Experimenting with Flavors
I’ve used feta, ricotta, and mozzarella for the cheese mixture in my Khachapuri adaptation, but luckily the recipe is super flexible and you’re free to add any favorites you like. I recommend keeping the mozzarella as a base but feel free to add in others such as goat cheese, cheddar, or Monterey Jack for an added zing.
I’ve garnished the dough of my Khachapuri with my absolute favorite topper, Everything But The Bagel Seasoning. This gives the bread a great crunch, but you could also use chili flakes, green onion, or Trader Joe’s Chili Onion Crunch. If you like more heat, slice up a jalapeno and pop them in!

Shaping the Khachapuri (Georgian Cheese Bread)
Your pizza dough will be split in half, then split again into 4 balls. Use a rolling pin to flatten one ball of dough into a 9-10” oval. Move it to a baking sheet lined with parchment paper and place your cheese mixture on top.
To shape the Khachapuri, roll the long sides of the dough towards the center 2 to 3 times, and repeat on the other side until the dough resembles the shape of a boat. Pinch and twist each narrow end of the dough closed so the cheese and egg-goodness doesn’t spill out.

A few things I learned AFTER making the Khachapuri (Georgian Cheese Bread):
- It makes the perfect shareable snack or meal.
- It still tastes great if you decide to omit the eggs.
- If using store-bought dough, let it rest on the counter at room temperature for at least an hour to allow the yeast to settle.
- You can make the pizza dough ahead of time and freeze it for convenience.
- Don’t push the cheese mixture into the dough, just sprinkle it on top instead. This will allow the dough to remain fluffy.
- Adding the Everything But The Bagel Seasoning to the edges of the dough was a great choice, as it adds more flavor and crunch.
- It’s not traditional to Khachapuri (Georgian Cheese Bread), but try adding a little heat for a flavor kick. I would recommend chili flakes, your favorite hot sauce, or Trader Joe’s Chili Onion Crunch.
When to enjoy the khachapuri?
Khachapuri is best enjoyed right out of the oven when the cheese is still bubbling and gooey. Stirred together, the cheese, egg, and butter form the most delicious and decadent combination. Definitely a must-try!

Perfect for Parties
We now know that the Khachapuri (Georgian Cheese Bread) is great to share with family and friends, especially for breakfast or brunch. For a fun party idea, invite your guests over in the morning and have small portions of dough prepared ahead of time. Layout a bunch of different cheeses, toppings, and flavor-enhancers so everyone can make their own Khachapuri just how they like.

Khachapuri (Georgian Cheese Bread)
Ingredients
- 1 pound pizza dough, store bought or homemade
Filling
- 1 cup feta cheese
- 1 cup ricotta cheese
- 2 ½ cup shredded mozzarella cheese
- 2 tablespoons onion salt from Trader Joe's or dried dill
- 2-4 eggs + 1 for egg wash, if you're making 2 larger ones, you need 2 eggs and if you're making 4 smaller ones you'll need 4 eggs
- 2-4 tablespoons unsalted butter, if you're making 2 larger ones, you need 2 tablespoons and if you're making 4 smaller ones you'll need 4 tablespoons
- 2 teaspoons Everything But The Bagel Seasoning
- ½ teaspoon red pepper flakes, for spice, add or Trader Joe's Chili Onion Crunch or the flakes
- 2 tablespoons green onion, finely chopped
Instructions
Store-bought dough instructions
- Place cold dough in a bowl with a touch of oil, and swirl it around to coat the dough. Cover with a tea towel and let it rest for at least an hour. Punch down the dough to release any air bubbles.
Preparing the Khachapuri (Georgian Cheese Bread)
- Preheat your oven to 350ºF. I use a convection oven. Increase the temperature to 375ºF to work in a still oven. Watch the cooking time.
- For the cheese filling, add mozzarella, feta, ricotta cheese, and onion salt or dried dill to a bowl. Mix all together.
- Divide the dough in half, then create 2-4 balls (depending if you want 4 smaller or 2 larger ones to share). Roll one piece of dough into a 9-10” oval, about 1⁄8” thick.
- Place the rolled dough onto a baking sheet lined with parchment paper and begin filling the center with the cheese mixture, leaving a 1⁄2” border all the way around.
- Roll the left side of the dough toward the center 2-3 times so it overlaps with the cheese. Repeat on the opposite side. The Khachapuri will start to form a boat shape.
- Pinch and twist both narrow ends of the dough twice to seal.
- Brush the edges of the dough with egg wash, and top with Everything But The Bagel Seasoning (optional) while it's still wet.
- Place the baking sheet with the Khachapuri in the oven and bake for 20 minutes.
- After 20 minutes, remove the Khachapuri from the oven and form a well in the center of the cheese. Crack an egg into the well. Break 1 tbsp of unsalted butter into several pieces and drop them in the cheese.
- Bake for an additional 5 minutes or until the egg is cooked. Remove from the oven and enjoy while the Khachapuri is still warm and the cheese is gooey. Sprinkle with some green onions and additional spicy toppings if you'd like.

What a beautiful entreé for Easter Brunch – served outdoors on a gorgeous, Portland day. I made my own dough, and kind of winged it – I made one large, instead of two small, and the cheese was a bit too well done when the crust was baked – but that’s my bad! I’m going to continue to perfect this recipe so it is as good as Lena’s. The flavor and presentation are great!!
lenaskitchen
I am so happy to hear that Cary. I think they work better in two smaller ones for sure. Thank for sharing your review. Happy cooking!
Teresa
Made this for Easter brunch- just my hubby and me – Delicious! We almost ate the whole thing ourselves!!! If I could just figure out how to post a picture of it !!!!
Sasha Le
Tried this today for our Easter brunch and it was incredible. Easier to make than I expected but has such a depth of flavor. The only thing I will do differently next time is leave it in the oven a little longer for the eggs to cook through more because I was worried about burning the cheese. But that’s all my timing issues ?
lena
Thank you for sharing Sasha. Glad it still turned out great for you.

This was so good! I used the Pillsbury pizza dough to save time, and added a little marinara for a twist.
Suzy
I used the Pillsbury pizza dough from a can and still turned out so good! (I didn’t have to wait the hour for it to rise, I’m really bad about waiting haha) super yummy and looks so fancy
*I added little dallops of marinara because we ended up eating this like a brunch pizza.

I totally hear you. Next tie you can grab some dough from the grocery store and put it on your counter when you come home and let it do it’s thing until dinner time… it will cut the “waiting” time when it’s dinner time.
